Our Ethos
Lussmanns is founded on the fundamental belief that it’s possible to be ethical and profitable.
We believe that eating out can have a restorative impact on the planet. Since 2002, we have pioneered sustainable dining – championing local sourcing, promoting organic, high-welfare farming and serving MSC-certified fish. We recycle 100% of all waste, support a wide range of charities and offer our colleagues well rewarded and rewarding work.
In 2025 we achieved the Sustainable Restaurant Association’s (SRA) Food Made Good Standard – the world’s largest sustainability certification for restaurants – achieving the highest rating, Three Stars, thereby joining an elite and forward-thinking group of restaurants dedicated to making eating out better for everyone and our wonderful planet.

How we Source
Sustainable Sourcing
More than 95% of the food you eat here is grown or produced in the UK. We further minimise our impact on the environment by supporting ethical, welfare driven and British farmers.
Organic Lamb, Mutton, Beef, Charcuterie and Chicken
Since 2024 we’ve been sourcing and serving the vast majority of our meat from Devon, from the fabulous and certified organic Haye Farm to be precise.
MSC Sustainable Fish
Since 2014 we’ve held Marine Stewardship Council certification – the familiar blue ecolabel – and the mark that guarantees your seafood comes from healthy stocks and is caught without damaging the environment.

Rewarding
Service
We pay above the industry average plus overtime, provide regular training and career progression opportunities to our cherished chefs and front of house teams. A discretionary 12.5% service charge will be added to your bill. 50% of your tip goes to waiting staff, with the remaining 50% shared among team members who contribute to your dining experience
Minimise Waste
Since 2012 we have recycled all our waste so that nothing goes to landfill. Your leftovers are anaerobically composted to produce renewable energy and we work closely with our suppliers to reduce packaging.
Support Our Communies
Every year, we assist a wide range of charities and local community events and organisations. Since 2017 we have donated over £50,000 to local charities as well as hosted many fundraising events.
