We’re particular about what we put on your plate. Particular not only about it being delicious, but also about how, where and when it’s been grown, reared, caught or produced.
That means, every dish you order at Lussmanns comes with a threefold promise:
It’s been made with quality, almost always British, seasonal ingredients
They’ve been caught, reared, grown or produced by farmers, fishers and makers who care passionately for the land and sea.
All the men and women who prepare and serve you that dish are treated with respect.
That’s been our commitment ever since opening our first restaurant in 2002. We remain dedicated to those promises and, to make good on them, hold dear these six principles:

We value food – no bull
At a very early age, my mother taught me the importance of knowing where food’s from and how it’s been produced. That’s why at Lussmanns we insist on sourcing meat exclusively from farmers that do more to look after their animals and their land, like Harry Boglione and his family at Haye Farm in Devon. All meat served in Lussmanns is either free-range, organic or both.

We ensure there are plenty more fish in the sea
I love fish. To guarantee that my children and grandchildren can enjoy the same species in years to come, we only source and serve those from plentiful stocks. We’ve been certified by the Marine Stewardship Council (MSC) since 2014 and all 20 tonnes of seafood we serve annually come either with the MSC’s blue ecolabel or a Marine Conservation Society Good Fish Guide approval (a rating of 1-3). We celebrate the best of British
British farmers are the foundation stone of our food system and produce some of the world’s finest ingredients. It’s why, currently, 95% of all the food we serve is grown, reared, caught or produced in the UK and we change our menus changes seasonally to serve ingredients at their very best. We Hate Waste
Since 2012 we have recycled all our waste so that nothing goes to landfill. Your leftovers are anaerobically composted to produce renewable energy and we work closely with our suppliers to reduce packaging. We repurpose furniture as much as possible in our restaurants, such as reusing table legs for our Woburn bar design.

We cherish the communities we work in
All our restaurants sit in the heart of a small town or community and that’s precisely where we want to be. Over the last few years, we’ve contributed more than £55,000 to local good causes, through charity dinners as well as meal voucher and cash donations. Behind every great restaurant are hundreds, if not thousands, of even greater people. We work tirelessly to have a positive impact on the lives of our fantastic farmers, fishers, growers and producers as well as our own cherished chefs and front of house team. We pay above the industry average plus overtime, provide regular training and career progression. Please join us in showing your respect for them all.

In 2025 we achieved the Sustainable Restaurant Association’s (SRA) Food Made Good Standard – the world’s largest sustainability certification for restaurants – for the eighth time, achieving the highest rating, Three Stars, thereby joining an elite and forward-thinking group of restaurants dedicated to making eating out better for everyone and our wonderful planet.
