Hertfordshire’s most sustainable independent restaurant group is celebrating Sir David Attenborough’s 100th birthday with a special menu and donating £1 to the county’s Wildlife Trust for each dish customers order from it.
Lussmanns, the only restaurant company in the county with a Three Star Food Made Good rating from the Sustainable Restaurant Association, will be serving three carefully chosen dishes that exemplify its ethos and highlight critical issues close to Sir David’s heart on his landmark birthday on Friday 8 May.
Andrei Lussmann, founder and Managing Director of Lussmanns, said: “When it comes to flying the flag for the natural world and how we can all do something to protect it, Sir David is in a class of his own. He is environmental royalty. The plight of the rainforests, plastic pollution, biodiversity depletion; he’s brought all of these incredibly important issues to our attention and continues to do so as he passes this incredible landmark.
“That’s why, in all five of our restaurants, customers can order a starter, main course and pudding, all of which taste great and will make a difference as we’ll donate £1 per dish to Herts and Middlesex Wildlife Trust (HMWT).”
Since opening its first restaurant in 2002, Lussmanns has operated on the basis that the decisions we make about what we eat have an impact on nature. Customers at St Albans, Harpenden, Hertford, Hitchin and Woburn, can enjoy three outstanding dishes using the very best of British seasonal ingredients.
English asparagus, the flag bearer of spring producer is the centre piece of the starter. Paired with Somerset goat’s crud on a bruschetta with a Hertfordshire honey vinaigrette.
The main course champions ChalkStream trout from the clear, crisp Hampshire waters. It comes with a courgette, nettle, and basil purée.
The quintessential English fruit is the pudding star: early season strawberry sundae with Lewis of London ice cream, made with milk from their herd in Barnet.
