Orange and Almond Pudding

For many, a meal isn’t complete without pudding. Our selection of films featuring some of Lussmanns classic dishes wouldn’t be either.

This dense, sweet and marvellously moist pudding is one that any home cook can wow their guests or family with, even the reluctant bakers amongst you.

Made with ground almonds and gluten-free baking powder it’s perfect for Coeliacs too.

It works a treat served with ice cream, crème fraiche or mascarpone. So, simply watch the film and get baking.

Serves 12 

Ingredients

4 whole oranges
8 Free range eggs
320g Caster sugar
200ml Olive oil
350g Ground almonds
20g Baking powder gluten free
50g Unsalted butter

Method

    1. 1. Cut oranges into ¼s, place them in a pan and bring to the boil, simmer gently for 20-30 mins or until soft
    2. 2. Strain water and set aside until cool enough to handle
    3. 3. Remove the pips
    4. 4. Place oranges in blender with skin & blend to a paste
    5. 5. Pre-heat oven to 180°C
    6. 6. Whisk together the eggs & caster sugar in a bowl
    7. 7. Fold in the almonds, orange paste & baking powder
    8. 8. Line a cake tin with greaseproof paper and grease it with the butter
    9. 9. Spoon mixture into the tin to the top
    10. 10. Remove once cooked and cool (test with point of a knife, if knife comes out clean cake is ready)
